Cashew fruit (Anacardium occidentale)

The Cashew fruit is actually not a real fruit. It is a swollen stem that leads to the real fruit. The fruit is the nut like structure, from which the cashew nut is extracted from. The so-called swollen stem, which is referred to as the "fruit" is quite sweet when ripe and both yellow and red to orange colors can be found.

Its bright coloured pseudo fruit is full of nutrients and antioxidants, vitamin C. It is so juicy, I love it
