Scorzonera

Scorzonera is a herbaceous root vegetable originating in southern Europe. This vegetable was popular amongst workers during the industrial revolution as an accessible alternative to parsnips and carrots with whom they share much of their flavour profile.

First mentioned in botanical literature in 1561 in a letter by Odoricus Melchiorius ‘Those who ate from their roots will end their sadness, and regain laughter.’

Scorzonera has many health benefits including the ability to lower blood pressure, boost the immune system, stimulate hair growth, increase circulation and overall well being.
