Description

Salicornia europaea or glasswort is a halophytic annual dicot that grows in various zones of intertidal salt marshes. Salicornia europaea is highly edible, either cooked or raw. In England, it is one of several plants known as samphire (see also rock samphire). Samphire is usually cooked, either steamed or microwaved and then coated in butter or olive oil.

  • Easy to sow, grow, harvest, and eat.
  • Will self-seed every year.
  • Simply water with a saline solution that you can make at home.
  • Sow in spring or early summer. Very lightly cover the seeds after sprinkling them onto the surface of a tray of compost. Germination may be slow. Transplant to pots of free-draining soil when plants are 1″ (2.5 cm) tall. Will reach 2-3½” (6-8 cm) in height. Best watered with a saline solution (1 teaspoon of proper sea salt in a pint of water). Samphire will reseed itself so do not be too greedy later in the season, and let it flower, otherwise, it will not reappear next year. Has a salty taste
